Gabriel Mato started his political activity in the 90s, Between 1991 and 1995 , he was the first deputy mayor of the Santa Cruz de La Palma City Council, spokesperson for the municipal group and delegate councillor for Education, Youth and Sports. In 1995, he was elected deputy to the Parliament of the Canary Islands and between 1996 and 1997 he served as spokesperson for the Popular Parliamentary Group.

During 1997-2000 , he was in charge of the Ministry of Agriculture, Livestock, Fisheries and Food of the Government of the Canary Islands.

In 2009 , he was elected as a member of the European Parliament.
